4 Ingredient - Tilapia Patties

As a girl I remember my mom making Salmon Patties, there were for sure some times where we rolled our eyes at this dish, or didn't want it, but ate it anyway. Looking back now I can see why she made it...the simplicity is irreplaceable and the taste is super good. A few weeks ago I made Salmon Patties for the first time on my own for Jesse and I's dinner one night. They were a hit with him! Tonight after deciding on Salmon Patties for dinner, we came to horrifically find out, we had no salmon in the pantry. We eat tilapia fairly frequently, so bada-bing-bada-boom, the light-bulb came on. Tilapia Patties! They were really really great, and I think we liked them more than the salmon. 

What you will need: 1 sleeve of Saltine Crackers, 2 medium to large sized Tilapia Fillets, 1 egg, and your seasonings, Salt & Pepper. (I also added Lemon Pepper Seasoning because I am such a Lemon Peppered Tilapia fan.)

Thaw your fillets, and then cube them on the cutting board really small. Crush the crackers, I use a tea-towel and rolling-pin. Add everything together. Lightly grease your skillet, I used Pam Cooking Spray. turn the burner on Med-High, pat out the patties, about 3 inches in diameter and 1 inch-ish thick. Flip them a few times until a golden brown crust appears. 

Done-zo! Our meal was served with black beans, peas, and white cheddar macaroni and cheese. And in hindsight our meal a really healthy one.
