Chicken Burritos
Each night I ask Jesse, "What do you want for dinner, babe?" I always get one of two responses, either, "I don't care..make what you want." or "Chicken Tacos". This guy LOVES chicken tacos. It is ridiculous! So after several evenings of Chicken Tacos, I am over it. I once just ate the chicken, I once made my chicken and tortillas into a Quesidilla, but the best I have to offer to you is the Chicken Burrito, inspired partially by Qdoba.
To begin thaw and cube your chicken breasts. When making chicken for mexican dishes we add salt, pepper, chili powder, and a little big of cajun seasoning for spice.
In a seperate pan mix one package of spanish rice (or rice of your choice). After the rice is done add in one can of black beans (drained), 3/4 cup of corn (ours was frozen not canned), one diced tomatoes, salsa to taste, and one can of mushrooms pieces and parts, diced smaller.
Let it all simmer.
Before putting it on your burrito it will look lovely and colorful like this.... ooo lala.... muy bonita!
The rest is pretty self explanitory... heat up your tortillas and add the goodies in.
Add the cheese and chicken.
Roll them up and serve with some salsa to dip.
