Muffin Pan - Use #3


Breakfast Cups!

Another brilliant idea from the Miss.Muffy..(yes I have named my muffin pan, I love her that much!). 

Cut out bread in 3 in circles, I again used the lip of my Jiff Peanut Butter. 
Press them out and then press them into the muffin pan. 

Meanwhile, have your piggy piggy bacon cooking in the microwave or skillet, whatever you prefer. (I used two long slices of bacon to make 6 brekfast cups) 
Place a pinch of shredded cheese and a bit of bacon in the bowls and bake in the over for 5 min on 325 degrees. 

While that is baking mix you your egg mixture, I used 4 eggs with salt and pepper. (4 eggs filled 6 breakfast cups perfectly). That is one thing that is great about this recipe, is you can make as many or aws few as you want! Place the whisked egg mix in microwave for 1 min, then take out and stir, repeat. A total of two min. Stir them and then you're good to go...It should still be kinda ooey gooey. 

Take out and add in egg. The cup should be pretty much filled by now. Add another pinch of cheese on top of all of them and place back in the oven for 12 min. Then they will look like this, AHHH...YUMMMMMM! 

Pop out with a spoon and serve, now are those not adorable?

But the best part of it all is...you now have a happy husband, send him off with a full belly and wish him a wonderful day at work!
